Min-Maxing Clarity: A Flat Bottom Brew Recipe

The goal isn't balance. This recipe is built around extracting as much clarity, note separation, and upfront acidity as possible while intentionally sacrificing body.
It is not designed to produce the thickest or sweetest cup. Instead, it focuses on making individual flavors stand out — turning coffee into a more analytical and transparent experience.

The Philosophy
Every choice in this recipe is made around one goal: maximizing clarity.
That means reducing bypass, controlling agitation, keeping the coffee bed consistent, and pushing extraction further than a typical light roast recipe.
The recipe combines several small adjustments:
- Fast-flowing drippers
- Low-bypass filter preparation
- Controlled agitation
- Fine grinding
- Gentle water distribution
None of these changes are dramatic on their own. Together, they create a cleaner cup with better separation between tasting notes.
Gears
This recipe was developed using the SWorks dripper with a 3 mm Hex Screen. Other fast flat-bottom brewers also work well, such as:
- Orea V4 Fast Bottom
- Timemore B75
- V60 with boosters
A V60 also works surprisingly well. Expect to grind slightly coarser to achieve a similar drawdown.
Filter
The goal is to minimize bypass. A negotiated filter works well because it creates better contact between the paper and the brewer wall. In the video, I used a negotiated Codale filter. Other options that work well:
- Negotiated SWorks filter
- Sibarist filters
If your dripper does not support a negotiator, you can use a folding technique to "negotiate" a flat-bottom filter into the brewer and achieve a similar low-bypass setup. I'll cover that technique in a separate article.
Drip Assist
Use a Melodrip with a 46 mm screen The screen lets you be more reckless with your pouring while still maintaining even distribution and reducing unnecessary disturbance to the coffee bed. Un-screened Melodrip setups also work well, but they require a bit more control to avoid disrupting the bed.
Grind
Grind finer than feels emotionally acceptable. As a starting point:
Pietro (modded the zero point to burr touch not burr lock) 28–40 clicks (roughly 210–300 µm burr gap)
My finer Ethiopian coffees usually draw down between 1:55–2:05.
DF54 / DF64 / DF64V / DF83 / DF83V Around 22–30 is a reasonable starting point. If you are using burrs that naturally produce more fines, expect to grind coarser.
Skip RDT
For this recipe, skip RDT. The goal is to let the grinder retain some fines and chaff instead of intentionally relocating them into the brewer. After grinding, blow out as much chaff as possible. (I skipped this step in the video because I was lazy.)
Target drawdown: 1:40–2:10
Coffee
This recipe works best with hard-to-extract, light-roasted coffees. Examples:
- Sey
- Apollon's Gold
- Terraform
- Captain George
The lighter the roast, the better this recipe tends to perform. With darker roasts, the same approach tends to emphasize roast-derived flavors, which works against the goal of maximizing clarity and note separation.
Rest
Follow the roaster's recommendation. In general, longer rest usually works better for these types of coffees.
Water Temperature
Use the highest temperature recommended by the roaster. Higher temperatures will speed up extraction and drawdown. If the cup becomes noticeably astringent, lower the temperature.
Ratio
1:14
Dose
12 g in the video. The recipe scales well up to 15 g. Expect a slightly longer drawdown, ideally staying below 2:30.
Recipe
0:00 — First Pour
48 g water (4× dose)
- Pour at 5–7 g/s
- Finish within the first 10 seconds
- Melodrip just above the coffee bed
- Spiral pour
0:30 — Second Pour
48 g water (4× dose)
- Pour at 5–7 g/s
- Finish within the first 10 seconds
- No Melodrip
- Kettle can sit slightly above the dripper rim
This is the only intentionally aggressive pour. The goal is to introduce as much agitation as the recipe can tolerate. Without this step, the cup can become too clean — almost suspiciously tea-like.
0:45 — Third Pour
72 g water (6× dose)
- Pour at 0.7–1.8 g/s
- Around 1.5 g/s is the sweet spot
- Aim for a drip rate around 1.4–1.7 g/s
- Melodrip just above the water surface
- Use a crosshatch pattern to maintain a slow, consistent flow
You might think slower drip assists would work even better. They don't. The larger diameter often forces a higher pour height, increasing agitation and slowing the brew through fines migration. Physics continues to be inconvenient.
Calibration: Finding the Extraction Limit
One of the hardest parts of brewing high-clarity recipes is knowing whether you have pushed extraction far enough. Instead of immediately changing grind size or recipe variables, use the coffee bed itself as a test.
After the brew finishes, pour another 1× dose of water through the same coffee bed into a separate cup. For this recipe:
12 g coffee → add another 12 g water
Taste this second extraction.
- If you get a hint of sweetness, you are likely extracting enough from the coffee.
- If it still tastes noticeably acidic, you can push extraction further. Try grinding finer if your drawdown still allows it, or increase the agitation during the second pour.
A little acidity is fine. Panic is optional.
